French Bean or Runner Bean Salad

SUMMER

 

Served warm or chilled, a perfect salad for a summer day.


INGREDIENTS

  • 500grams French or runner beans.

  • 3 tablespoons chopped mint

  • 1 small onion, diced very small

  • 1 small garlic clove, chopped finely

  • 2oz capers

  • Salt and pepper to taste

  • 5 tablespoons French dressing or vinaigrette

  • A squeeze of lemon juice






METHOD

  1. Steam the beans until tender but still crisp.

  2. Mix while still warm with all other ingredients except vinaigrette and lemon juice to combine.

  3. Mix in the vinaigrette and lemon juice.
