Courgette Cake

Another great summer recipe which also freezes well to enjoy once summer is over.


Alistair at Plot 29 has a great tip for this cake which is delicious: soak fruit in a little rum overnight before adding fruit and any remaining rum to the mix.   


If you prefer a cake with a crusty outside and a moist middle, use self raising flour instead of plain.


INGREDIENTS                                 

  • 2 cups sugar

  • 3 cups plain flour

  • 3 eggs, beaten

  • 1 cup vegetable oil

  • 1 teaspoon salt

  • ¼ teaspoon baking powder

  • 1 teaspoon bicarb

  • 1 teaspoon vanilla essence

  • 2 teaspoons cinnamon

  • 2 cups grated courgette

  • 2 cups nut or dried fruit or combination of both.






METHOD

  1. Beat sugar and eggs together.

  2. Add oil and vanilla to eggs and mix well

  3. Mix in courgettes and nut/ fruit.

  4. Fold in flour. Blend well.

  5. Pour into two greased and lined 1lb loaf tins.

  6. Bake gas mark 4, 180c, 160 fan for 1 hour.
