SUMMER
Another great summer recipe which also freezes well to enjoy once summer is over.
Alistair at Plot 29 has a great tip for this cake which is delicious: soak fruit in a little rum overnight before adding fruit and any remaining rum to the mix.  Â
If you prefer a cake with a crusty outside and a moist middle, use self raising flour instead of plain.

INGREDIENTSÂ Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â Â
2 cups sugar
3 cups plain flour
3 eggs, beaten
1 cup vegetable oil
1 teaspoon salt
¼ teaspoon baking powder
1 teaspoon bicarb
1 teaspoon vanilla essence
2 teaspoons cinnamon
2 cups grated courgette
2 cups nut or dried fruit or combination of both.
METHOD
Beat sugar and eggs together.
Add oil and vanilla to eggs and mix well
Mix in courgettes and nut/ fruit.
Fold in flour. Blend well.
Pour into two greased and lined 1lb loaf tins.
Bake gas mark 4, 180c, 160 fan for 1 hour.
